About us

Inside Caffènation by Guji

Guji is a coffee region in southern Ethiopia. That is where the name comes from.

We have two bars in Amsterdam. Warmondstraat 120 opened in 2014; Florian, who runs both, came to work there in 2017 and took the place over in 2022. It serves Caffènation, roasted in Antwerp.

Caffènation publishes what it pays for green coffee: the price the farmer got per kilo of cherry, the price on the boat, and what they then charge us. Any roaster can say they pay fairly, because saying it costs nothing. Printing the number means you can check it, and it puts the same question to everyone else. They were the first Belgian roaster to sign the transparency pledge, in 2021.

The kiosk on Zoutkeetsplein opened in March 2025. We pour April Coffee, roasted in Copenhagen by Patrik Rolf, alongside coffee from other roasters. Ask us what is on the bar today.

Every espresso drink is a double shot and comes in one size. The grinder is dosed for a double basket, so pulling a single means dosing off and binning the difference. A single is really half a shot rather than a whole one. Doubles taste better and waste less coffee.

Plant milk is free. Charging extra for it makes the better choice the more expensive one, and climate and animal welfare matter enough to us that we would rather not do that. The oat is ROA, made in Amsterdam. The pea is Sproud. The cow's milk is MOMA, who buy from organic farms around the city and pay those farmers directly.

Everything else follows the same rule: local where we can, organic where we can, as fair as we can manage towards people, animals and land. Toasties are made to order on Louf sourdough. The juices are cold-pressed by Juice Brothers.

Jobs

Work with us

We are a specialty coffee bar, and we look for people who care about that, or at the very least are curious about it. Right now we are mainly looking for school students aged 16 to 18 who want to work weekends as a runner at Caffènation on the Warmondstraat. You do not need to know anything about coffee yet, but you do need to want to learn. There is no opening behind the bar at the moment, but baristas can leave their details and we will come back to you when something opens up.

What is specialty coffee?

Ordinary coffee is bought in bulk, often of mixed quality, and is often roasted dark. That evens out the differences between beans, so every bag tastes the same. Specialty coffee is the opposite. Trained tasters give it a score out of 100, and traditionally only coffee with 80 points or more counts as specialty. Much of the coffee world still uses that line.

For us that means we know which farm or cooperative each coffee comes from, how it was processed and when it was roasted. We weigh every shot, taste the espresso every morning and adjust the grinder until it is right. A good coffee can taste of fruit, flowers or chocolate, and we want our guests to notice that.

As a runner you are not behind the bar yet, but you are part of that team. You keep the café running so the baristas can focus on the coffee, and you learn from them along the way. If coffee is just coffee to you, this is probably not the job for you. If you want to know why one cup tastes so different from the next, we would love to hear from you.

Three questions about the text

The answers are in the piece What is specialty coffee? on this page. Get all three right and you can apply. You can try as often as you like.

1. According to the text, what happens when ordinary coffee is roasted dark?
2. From how many points out of 100 does a coffee traditionally count as specialty?
3. What do we know about every coffee we serve?

We can see how many tries it took. We never turn anyone down for that.
